Garlic is an essential product in our daily diet and meals. We use it to dress and season countless dishes, adding flavor, aroma, nuances and texture. As it is such a common ingredient and a fresh product imported and exported by many different countries we must know how to preserve it in order to keep it in the best conditions for as long as possible.
How to keep fresh garlic fresh: cold is the key
As garlic growers we are experts in the entire cultivation , conservation and marketing process of this product. When garlic is harvested at the beginning of summer, between May and June, it is stored in our facilities without the need to be put in cold rooms until the end of August. Once we reach the end of summer, in the case of the spring garlic varieties, it must be stored in cold rooms and kept at between -2ºC and -3ºC degrees to guarantee fresh garlic of the highest quality until the following season. At Dispaman we have four cold rooms with capacity for two million kilos, thus ensuring that we are able to offer guaranteed fresh garlic to all our customers throughout the year.
How do we keep peeled garlic cloves fresh?
The peeled garlic clove is a product that is increasing in demand by distribution companies, catering companies and also by direct customers. This product has offered us a new business opportunity in the market and at Dispaman we have taken said opportunity and we offer peeled garlic cloves, from our own harvest, peeled by our staff in our own facilities. Logically, the lifespan of this product is shorter than that of the garlic heads, as it does not have its original layers, although this shouldn’t be a problem as the product is meant to be consumed in a short period of time. In Dispaman the quality of our products and our services is our top priority and to keep the peeled cloves of fresh garlic and lengthen its shelf life as much as possible we keep it in cold rooms at 2 º C degrees from the moment it is peeled.
How to keep fresh garlic at home
For the garlic heads, in order to keep them fresh, it is best to hang them or place them in a ventilated place in the kitchen and leave it at room temperature. For peeled garlic cloves it is best to keep them in the fridge in a closed container.
